A New Kale RecipeIngredients:
- 1 red onion, chopped
- 1 large bunch kale, washed and chopped into fairly small pieces
- 3-4 T. red wine vinegar
- 1/4 to 1/2 cup parmesan cheese
- 1 lb. Pasta in your favorite shape
Saute onion in olive oil; add kale and cook until it gets a brighter green. Add vinegar, lower the heat, and cook covered until kale is soft. Toss with pasta and cheese.
