African Pineapple Peanut Stew

  • 1 c chopped onions
  • 2 minced garlic cloves
  • 1 T veg oil
  • 4 c swiss chard or kale, sliced
  • 2 c undrained canned crushed pineapple
  • 1/2 c peanut butter
  • 1 T tabasco or hot sauce
  • 1/2 c chopped cilantro salt to taste
  • chopped peanuts
  • chopped scallions


Sautee onions and garlic in oil in covered saucepan for 10 minutes stirring frequently. Clean greens and discard any large stems, cut into 1" strips. Add pineapple and its juice to pot and simmer. Stir in greens, cover and simmer 5 minutes. Mix in pb, hot sauce, and cilantro. Sprinkle with peanuts and scallions. Serve over couscous or brown rice. Serves 4.
