All Natural Strawberry Gelatin

  • 1 quart apple juice
  • 1/4 cup agar flakes (make sure you use the flakes)
  • 1 pint strawberries (but I use all kinds of fruits)
  • 2 tablespoons maple syrup, optional


Place agar flakes and one pint of apple juice in a sauce pan and allow agar to soak for 10 to 15 minutes. Wash and hull berries. Puree berries in blender with the remaining apple juice. Set aside. Bring agar and apple juice to a boil then turn down the heat to simmer, stirring frequently, until all agar is dissolved (be patient!) this part usually takes me about 10 to 15 minutes. When all the agar is dissolved, allow the juice mixture to cool slightly, then pour it into the blender with the pureed berries. Blend briefly to combine. Pour contents of blender into a medium sized glass baking dish or parfait cups and allow to cool in the fridge until it sets. (This is usually only about 5 or 10 minutes, if that. I use cute cookie cutter shapes to serve mine -- it molds very nicely.
