Lanttulaatikko - Finnish Turnips

  • 1 lb. Turnips peeled and diced into 1/2" cubes
  • 3 Tbs. Cold Unsalted Butter, diced. Plus more for greasing the pan
  • 1 c Heavy Cream
  • 1 c Fresh fine Breadcrumbs
  • 1 tsp. Sea Salt (to taste)
  • 1/2 tsp. Fresh grated nutmeg
  • 2 free range eggs beaten


Cover diced Turnip with lightly salted water and bring to a boil. Lower the heat and simmer for 20 min. Allow the Turnips to cool in the water for 30 min. Drain and mash the turnips. Preheat oven to 350 Degrees f. Grease a deep oven proof dish with butter. In a bowl, mix the cream, breadcrumbs, salt and nutmeg together. mix in the beaten eggs. Add the cream mixture to the Turnips and add the mixture to the prepared dish. Sprinkle the cold diced butter over the top and bake for 30 min, or until browned and a bit crispy on top. You can also sprinkle a bit of breadcrumbs on top, before you put on the butter.
